Pale yellow with straw highlights and continuous copious bubbles. On the nose soft and well-defined with clear hints of green apples, plums, pears and apricots, which alternate with floral notes of jasmine, acacia and wisteria. It is lean and dry, contrasting the first impression of sweetness. On the palate it is subtle and harmonious, with the fresh fruit pulp component still dominant culminating in a well-balanced, intense lingering finish.

Production Notes
The selected hand picked grapes are vinified by gravity method and fermented off the skins at a controlled temperature of 15 - 18°C. The prise de mousse and lees maturation normally take place for approximately 90 days in pressure tanks, on selected yeasts, at a temperature of 13 - 14°C. The wine is aged for at least one month before distribution.
