Production Notes
The grapes were crushed and destemmed before being immediately cooled to 5-8°C and maintained at these temperatures for four to six hours. The resulting must was then softly pressed and the juice obtained was clarified at low temperatures for 36 hours. The clear must was fermented in stainless-steel tanks for 15-20 days at temperatures of 16-18°C. The wine was aged for three months in the bottle before release.

Mandrarossa is a winery based in Menfi in the south-west of Sicily, where the island slopes gently down towards Africa. It is a wild, unspoilt region of outstanding, unexpected beauty, created by the continuous interaction of Sicily’s most characteristic natural features with elements brought from Africa by the winds and sea.
The countryside is wild and uncontaminated, the climate dry and the strong sunlight is often dazzlingly intense; ideal conditions for growing vines. Here, the land changes with every step you take, from clay to limestone to sandy or loose-packed, providing varying terroirs for the cultivation of different grape varieties. It is in this superb wine country that Mandrarossa has selected the finest plots in which to plant a range of premium varieties and these vineyards endow wines with genuine varietal expression. These exceptionally fine growing areas yield terroir-true wines with robust character, capable of communicating the special nature of the territory that produced them. All are wines of personality and appeal; all are authentic; all come from a unique, pristine region of outstanding beauty.
