Following picking, the grapes are cool and cryomaceration occurs for 8 hours at 8°C. Alcoholic fermentation is the carried out in barriques, along with malolactic fermentation. The wine then spends a further four months in barriques before bottling.

The Cotarella family name is intrinsically linked to some of Italy’s finest wines: Riccardo Cotarella is one of the country’s most revered winemaking consultants, and his brother Renzo is the longstanding chief winemaker at Antinori. Together they founded the Falesco winery in Lazio in 1979, with the goal of showcasing local varieties that had fallen from favour.
The acquisition of an estate in Umbria in 1999 allowed the brothers to broaden their range further. In 2016, their daughters Dominga, Marta and Enrica took over the reins, and in the same year expanded the vineyard holdings into Tuscany, taking over the stunning Le Macioche estate in Brunello di Montalcino.
