Production Notes
The grapes were left to partially dry on the vines. Upon arrival at the winery, they underwent a maceration on the skins lasting 15 to 20 days followed by fermentation at controlled temperatures using selected yeasts. Post fermentation, the wine was first aged in concrete tanks for eight months and then in French oak barriques for a further twelve months before bottling and release.

Producer Information
Cantina Diomede comprises 200 hectares of organically farmed vineyards in northern Puglia, close to the town of Canosa. Oenologist Dennis Verdecchia works hard here to obtain high-quality, healthy grapes, with most operations carried out manually.
The ‘Canace’ Nero di Troia is an amazing wine. Aged for 12 months in large French oak barrels, this wine balances richness with fresh acidity, velvety tannins, and a spicy finish.
